Food Pairing and Dicing Onions
Posted by: Dawn Thurnau on October 8, 2008We just finished a cooking class with community leaders to discuss flavor pairings… It’s always interesting to see which flavors folks like to put together to make their own signature dishes. One of the all-time favorites is beef and onion.
There’s a lot of advice out there when it comes to avoiding the chopping onion tears. Martha Stewart says to burn a candle. Another tip is clenching with your teeth a wooden spatula or piece of toast. My sister bought be some cute pink onion chopping goggles- but I hear that swimming goggles might do the same trick if you don’t care about the fashion aspect.
Other flavor pairings that were big hits today included beef with aged cheese or worchestershire. And, of course, beef and mushrooms are loaded with umami!
