Inauguration Meal Suggestion
Posted by: Dawn Thurnau on January 20, 2009Being a self-described “foodie”, I have signed up for a plethora of food related email newsletters. The last week or so, I have been flooded with emails of potential party food and inauguration meals.
My favorite recipe emailed to thus far has been the Beef Tenderloin with Savory Saucy Mushrooms and Lentils- which seems appropriate, because I hear a rumor (aka- read in one of those electronic newsletters) that the president-elect has chosen to dine on beef filet the eve of his inauguration!
Of course, lentils are a great complement to beef- both are nutrient dense, and the flavors really seem to blend. You can make the above mentioned recipe in just about 30 minutes. While lentils simmer in beef broth, you can pan-broil tenderloin steaks in a nonstick skillet. In the same skillet, sauté mushrooms and shallots, then add beef broth and bring to a boil. Stir in a cornstarch-Worcestershire sauce mixture to thicken the sauce.

Plate each steak on a bed of lentils and drizzle with the savory mushroom sauce for an elegant presentation.
