Grandma’s Old Fashioned Porcupine Meatballs

This past weekend, some of my friends and I had a discussion of some old-style comfort foods that aren’t made as much as they used to be- probably for lack of time. It reminded me of Grandma’s Porcupine Meatballs. They were my favorite as a kid- I even remembered requesting them one year as my birthday dinner! I searched through my old cookbooks to find the recipe, but finally had to call Grandma. If you’re interested in a simple, hearty meal- I’d recommend these!

2 lb ground beef
½ c raw rice (I prefer brown or long grain)
¼ t pepper
1 t salt
1 small onion, diced
1 can tomato soup mixed with 1 can water

Mix first 5 ingredients, make into 1-2 inch balls and place into casserole dish. Bake at 350 for 45 minutes, pour soup mixture over meat balls and bake another 45 minutes.
